Nose: Sweet cream, chive and green onion, garlic and bright, crisp rainwater. Hint of jalapeno pepper, some pear, lots of cracked pepper. Complex, savory but not overbearing.
Taste: Rich on the palate, tons of cream, green pepper, string bean, white pepper, faint clay. Lots of nice fruitiness to pair with minerality and clay. Savory but not pungent, complex but not overpowering.
Finish: The finish is where this shines. Long, powerful, complex and loaded with flavor. Limestone, minerality, ash, clay and papaya. Sweet stone fruit along with pepper and light savory meatiness.
Overall: Wow, this is wild. This knocks it out of the park in terms of complexity, great flavors and balance. I love when a Mezcal can evoke such strong minerality/smoke notes while keeping the balance in check, and this demonstrates that Ensambles clearly have their place in delivering quality bottlings.
