The Schtick: Made with leg of lamb, this is a particularly interesting take on the Pechuga side of life. I love lamb, so this was a no brainer to review. Let’s dive in.

Nose: Vinegar, pickled onions, sweet. Agave syrup, pepper, nice complexity here. Savory and acidic without too much smoke.

Taste: Medium mouth feel – pepper, some smoke and minerality. Nice pepper and onion note. Gamey as heck, and oily as hell.

Finish: Long, rich but smoky and ashy. Loads of pepper, minerality, burning wood and some fruits.

Overall: This is unique and exciting, though the finish is smokier than expected. That said, it plays well, especially with how gamey the palate is. Giddy up.
