Bozal Tobasiche

The Schtick: Made with Karwinskii agave strain Tobasiche, this expression from Bozal is distilled using copper. Slightly older at harvest than most espadin, I find a lot of diversity in the flavors Tobasiche can bring, so I’m excited to be giving this a go. Let’s dive in,

Nose: Beef jerky, pickled onion, green bell pepper, string beans. Rich cream cheese frosting.

Taste: Rich with clay, minerality, salinity. Pepper, faint wood smoke. Confectioners sugar, cream.

Finish: Peppery, string bean, minerality, pineapple. Bizarre and fun – the salinity adds a fun touch. Minerality, some wood smoke, are all there and add some nice complexity.

Overall: Interesting, unique, delicious. It’s a bit dis-jointed, but I won’t turn down a glass.
