Nose: Sweet, mossy and loaded with Chamomile. Some nice pine, citrus and cinnamon as well. Hint of clove.
Taste: Initially sweet on the palate, with a medium mouth feel. Faint prick of heat, before the herbal notes step in for real. Juniper leads, followed by very potent chamomile, pepper, clove, cassia and a bit of pine bark.
Finish: Long on the finish but very heavy in the tea direction – cassia, juniper and more chamomile. Its not overpowering, but its bold and sticks around a great deal.
Overall: This is nott the most complex gin in the world. I thought it was good neat, but where it really got an opportunity to shine was in a citrus forward cocktail – a gimlet, or a fizz that is heavy on the lime. That chamomile and cassia note really respond well to bold citrus and some back sweetening, bringing great balance.
