Nose: Vibrant and spritely on the nose. Celery salt, earthy, quite a bit of minerality. Fruity and rich.
Taste: Powerful and complex on the palate. Sweet cream, notes of fuji apple, honey, toffee and some slate. Nice presence on the palate, proof feels right.
Finish: Long finish, savory and complex. Really rests on the back palate, hanging on for quite some time. Ash, a big hit of smoke, cream, lemon zest and toffee see this expression out.
Overall: Interesting and unique, this is complex and extremely drinkable. Beyond the novelty of the boar pechuga aspect, the pure drinkability of this bottling is notable, and I love how expressive and powerful the finish is.
