Nose: Sweet vinegar and oil, light brine. Not a lot gets by the vinegar note, save for a little olive.
Taste: Sweet, lots of confectioners sugar, some woody ash, some vinegar and a nice mineral note. Mouth feel is a bit on the thin side, but proof is just right.
Finish: Medium to long – ashy and smoke forward, with some wood, minerality, faint sweetness and some pepper
Overall: Really interesting transformation from vinegar to an ashy mineral bomb. I really like this.
