Nose: Fresh melon, like cantaloupe. Sweet cream cheese, light brine. Faint plastic note. Lots of clay.
Taste: Sweet and complex. Loaded with cream sweetness, fresh cracked pepper, light clay. No bitterness or astringency – something I was worried about from the nose. Lightly smoky, with a surprisingly rich mouth feel.
Finish: Long, a tiny bit hot. Some woody ash. Clay, crushed stone, creamy vanilla sweetness.
Overall: Complex and delicious. Big fan of this expression for walking the sweet and ashy line without diving into one or the other too heavily.
