Barrell Craft Spirits “T8ke Grey Label Infinite” 17 Year Whiskey – Chapter III: Ice Wine

Our third release with Barrell this year in a custom bottling, this is the third release of Grey Label Infinite to exist on the market. It also bears an age statement. The youngest component of this whiskey is 17 years old, and it represents one of the most exciting bottlings I’ve have the privilege of working on with the Barrell Craft Spirits team. My hat goes off to Nic Christiansen who was the driving force behind this final blend and it is a masterpiece. It’s a privilege to work with Barrell on these releases, and I’m excited to unveil our most daring release yet, exclusively for us. This project started in May of 2023, so it’s a long time coming. 

With last year’s T8ke Private Bourbon blend and the 10th Anniversary blend, I was encouraged by reception and committed to think bigger, and to put more time and effort into creating a couple pillared releases that are true exclusives to our group. Barrell shares that vision and our first question was: “but how do we go bigger than last year?” It wasn’t long before we were discussing the first grey label private release for a group. At this tier in their production, nothing was off limits. 

If you’ve never seen packaging like this before, it’s because it’s exclusive to our group entirely.

The components for this blend are insane. And, yet, we were able to be very aggressive with the pricing. This will come in under last year’s promotional Seagrass Grey Label pricing and our third release one again yielded 1,005 bottles. I say third, because this is the final chapter of a story we’ve been telling all year long. This is the final chapter of 2024’s Infinite Story, and while I’ve got a few drops from the blending vat saved back for something special these holidays, this is the last big release of 2024.

This release features Ice Wine as the finish, which has been one of my favorite finishes of all time, and represents one of the most popular finishes in our program. It’s also being retired from Barrell’s repertoire, this release and the Cask Finish Series Ice Wine that is launching alongside it will be the final releases to feature Ice Wine from Barrell.

With the addition of 20yr Kentucky Straight bourbon to this blend, the proof has been sent soaring as well (59% ABV on Infinite II, 63% ABV on Infinite III)

This is the final slice of the liquid we’ve been blending, finishing and moulding all year round. The final chapter of the blend this year. It is avant-garde, it is unique and it is unlike any other whiskey you’ll try. This release is bottled in true Grey Label fashion. Gold foiled labels, display box with gold foiling, and that weaponized metal/rubber cork. This is a release you don’t want to miss.



I present to you, Infinite Chapter III. It will release at 12pm Central this coming Monday. There is enough inventory we don’t need the wave system as there will be plenty of time for y’all to checkout for this release. That said, it will likely sell same day.

  • T8ke’s Tasting Notes: Powerful, rich, dialed up and loud, this is Infinite III. A marked increase in viscosity, complexity in texture matches a marked increase in proof as 20yr Kentucky enters the blend. Ice Wine contributes gorgeous, delicate, sweetness and complexity: apples, spiced pears, almond and confectioners sugar, apple butter and toffee. Melds wonderfully with honey, apricots, tobacco and more brioche sweetness. The palate is rich and chewy, fat and rich and opulent, packed with sweet oak, honey, cracked pepper, brown butter, demerara and pleasant, balancing, stone fruit sweetness and acidity. The oakiest, richest, most viscous of the three, the higher proof brings mor oak, cola, barrel char and tobacco to fuse bold tannin with warming spice, apple butter, delicate white grape sweetness and satisfying, indulgent, transformation from Chapter II.
