Notes: Big butter cream at first gives way to some spicy back palate punch! Rich, viscous mouth feel, it was a surprise when we found out the proof on this at dumping. Sweet honey, bright pepper, cream and vanilla bean with a touch of cocoa and cherry as it lingers.
Additional Info: This barrel comes as a result of a day spent sampling barrels at PCS. Several other barrels were picked alongside this one. We spent the early part of the day chasing down a variety of rye barrels. After a couple great ryes were secured, it was time to take a trip to the rafters and see what bourbon was available. This barrel comes from PCS’s oldest stocks – not just anyone gets access.
